Some restaurants serve a whole trout that is butterflied open without the bones. What’s the easiest way to do this?

I’ve watched several bass tournament shows and those guys catch a LOT of fish for competition. What happens to the fish afterwards? It’s not like I see a lot of fish specials in restaurants and supermarkets after the event.
